I had to go to see my son play at a gig for his music course last week: The pub only served standard hamburgers etc so I wnt for a walk and found a Japanese restaurant a mile or so away. I had the BEST chicken katsudon donburi with Japanese curry sauce!
Yeah they do a good job getting the hanjyuku tamago the proper consistency by not overcooking it.
Another thing I noticed is that the ramen for the tonkotsu was thicker than the rame for the shoyu or curry ramen... I suppose there's a logic to it...

Yeah I noticed that at other restaurants too. I guess the chef matches certain types of noodles with different types of ramen. Perhaps the type of broth (i.e. shio, shoyu, tonkotsu, etc.) in the ramen dictates the choice of noodles, whether the are straight, curly, thick or thin.

I'd have to say I like the thick noodles in the tonkotsu ramen over that of the shoyu ramen... More substantial.

Ah, maybe so.
Though I noticed that the tonkotsu broth didn't have any large globules of fat like at some other ramen shops, yet it was still quite flavorful.
