It's pretty good at least at this one spot. Jonathan Gold wrote about this place's birria back in the 80s apparently. I've only tried it at one other place but my friends recommend this other spot in East L.A. which I have yet to try.

Hmm...it taste a little like game I guess...maybe a somewhat a cross between lamb and beef if I had to related to something else.

It's pretty good. At this place they braise the meat until it's really tender and then they stick it in the oven to crisp the outside of the meat a bit. You really can cut the meat with just your spoon so it is the one and only utensil you need for the meal.
