Poor thing....I think that would be "kawaii sou" or something like that.

"to" is used to connect 2 items like so: "Watashi wa nihongo TO eigo hanasemasu" (I can speak Japanese and English)
"soshite" is used to connect phrases: "Watashi wa nihongo ga hanasemasu SOSHITE eigo ga yomemasu" (I can speak japanese and read english)

Just as a clarification, 'soshite' can be used, albeit it's a little more formal.

Here's an example:

uI̗΁IāẢFIǂȂIv
(Oi! Soko no midori! Soshite, soko no kiiro mo! Dokinasai!)
"Hey! You in the green! And you in the yellow, too! Move it!"

You don't hear it often, but it does happen.
If you are simply trying to connect two nouns, though, 'to' is a much better choice.

HTH,

"Chichi no hi" would be correct, although you could substitute "tanoshimi ni" for "omedeto"
Edit: you might want to put an "o" in front of that "tanoshimi ni" (you can NEVER be too polite Mr Green )
