Went to Mottainai over the weekend and tried the Sapporo Miso Ramen and it was excellent! I think this broth suited my taste a little better than the Japanese ramen I had at Mitsuwa. The noodles were on the thicker side and cooked just right, too. AND the gyoza was excellent, too!! The filling was very tasty and the gyoza was very plump and juicy. I can't go wrong with your recommendations!! Cool!

Excellent! I'm delighted to hear the miso ramen (and the gyoza) met with your approval. Applaud

Yeah the miso ramen there is definitely delicious and in fact is my favorite flavor offered at Mottainai. 4 different types of miso go into making the broth and the final taste is sublime.

Happy to share recommendations and spread a little joy. Smile

I thought the broth would be on the salty side but it wasn't. When the broth is tasty, I have to drink it all up!!! Thumbsup

We were there around 11:30 and by 12:00pm, it was quite crowded.

I felt that way about the broth at Ramen California as well: the tonkotsu ramen was really flavorful, but not salty in the least. Victory! Peace!

Yeah considering miso is a fermented food I thought the ramen would be really salty as well, but I agree with you, it was not. It's just delicious.

Yeah I really enjoy that place as well. The ramen there is decidedly more avant-garde although they do have some traditional offerings as well. The chef is Japanese with ramen experience back in Japan. The chashu in their ramen is a bit different but I like it quite a bit. It's much thicker. It's very tasty.

Some pictures to illustrate the point:




The pictures above are of the Niboshi Ramen - which is a blend of chicken and fish broth...instead of the typical tonkotsu (pork bone broth). Pretty darn good.

It's definitely noticeable, but its impact is mellowed out by the chicken broth which is much lighter and less pungent. I think the soup has a good balance, personally, but it might not be for everyone especially if you're not into fish.

Again, it proved to be a unique ramen as most ramen offered here is either tonkotsu (pork bone broth), shoyu (soy sauce), shio (salt), or miso based.

Haha. That thing looks huge. I'm sure the pig in me could take it down but usually when I go there I might share an appetizer or two with a friend so the 40 ounce bowl would be a bit much.
