Haha. Truly.
I dunno people rave about his restaurant. I went to Sushi Nozawa, his original spot, years ago for lunch and I was not impressed at all. I thought the food was mediocre and way too expensive. Perhaps I went on an off day or something...then I went to Sugar Fish in Downtown the other day as I mentioned and I thought the food again was way overpriced, unjustifiably so.
I've been to really expensive sushi places that were way better IMHO. He get's the

Good question. I get the jist of what you're getting at...
I dunno...perhaps his selection of the fish wasn't fresh or something. I am by no means an expert...but I guess the quality of ingredients that go into the preparation make the difference...but undoubtedly technique is important too...like preparing the shari (sushi rice) for example.

Looks a tad bit tastier than a McRiblet. I wouldn't mind sinking my teeth in to that right now, but I'll have to settle for some salmon & steamed asparagus instead.

I know. I read it. I'd definitely botch it. Say f*ck it and then go to Lucille's at the Del Amo Fashion Center and pig out on some ribs.
