Hehe. I only say say because I've been to Belgian French fry shops when I used to live in New York and one of the condiments available as a dipping sauce for the fries was always mayo.

In any case the fries at Umami were pretty good. First time I ate fries in almost two months.

I wish. It does taste noticeably different than "regular" ketchup. It's pretty good and I'm not even big on ketchup really.

I am sorry to bring the bad news to this forum BUT that is the only way one should eat fries! Mr Green Well, maybe Belgian cocktail sauce (ketchup, mayonnaise mixed with whiskey) is just as acceptable. The trick is to fry your potato slices twice and use home-made mayonnaise. Never the Hellman stuff. Ketchup and other condiments came only to fashion in the last 20 years or so - now you can pick between 20-40 different condiments, including samourai sauce (very spicy mayonnaise). The fry-shops are called frites-kots and there is over 4000 in Belgium although their quality has been decreasing and there is only a few authentic ones left in Brussels.

Nice explanation. Applaud

I wouldn't mind some mussels and pommes frites right now, with a couple of Stellas to wash it down.

Yes it takes discipline and years of training (and harsh threats from above mentioned Belgian mum) before one can enjoy fries that way.

Well, not really a big thing, it's mainly just that sausage, wich is usaully "served" with fries. I'd say it's the equivalent of the hot-dog.
